New Tomato Canning Method Keeps Firmness For Salads
County home demonstration agent Miss Jewell E. Ballew reports that calcium chloride can be added to tomato packs to retain firmness for winter salads. Use one teaspoon per quart with salt, process like salad tomatoes, and ensure precise amounts to avoid toughness. Fresh tomatoes can be stored cool and dark for one to two months with a mineral oil paraffin and beeswax treatment for stems.
