Dairy products dominate early American milk use and production
Blue Valley Creamery Institute cites that twenty cents of every food dollar goes to dairy, with 45.5 percent of milk produced used as milk products. Per capita milk consumption rose to 50 gallons in 1918, butter up to 16.5 pounds, cheese under 7 pounds, and condensed milk rising sharply, while a portion is diverted to nonfluid dairy products.
