Farmer cider and vinegar making seen safe under new rules
Connecticut farmers converting apples to cider or vinegar this summer face few risks from dry law enforcement. New regulations drawn by federal prohibition officials are awaiting final approval and aim to clarify treatment of on farm production and small scale vinegar making, while large commercial cider and vinegar operations remain licensed. Officials say immediate personal consumption from mills or homes should not invite arrest if proper inspectional orders are followed, but gatherings that disturb peace may invite trouble.
