Dorchester Chef Doucet’s Historic Apprenticeship Career
Charles M Doucet a 13 year old apprentice at Parisian caterers rose to lead kitchens in Paris and across France. He later cooked at the Russian restaurant in the Eiffel Tower and in Ostende before moving to Boston to work at several hotels. He served as chef at the Franconia Inn and at Dartmouth Dining, then joined the Revere House and now holds a position elsewhere. His oyster a la Marichale recipe and his Epicurean Club roles round out his culinary story with trusted methods and leadership.
