A cherry sauce recipe uses 2 cups fresh Northwest sweet cherries, orange juice, Burgundy wine, sugar, orange peel, water and cornstarch. Simmer 5 minutes then thicken with a water cornstarch slurry until clear. For frozen cherries, boil with orange juice wine sugar and peel, pit cherries, then thicken.
Select firm ripe Northwest cherries. Wash quickly in very cold water to keep the fruit firm and preserve juices. Drain thoroughly. Place in a zipper bag, remove air, seal with a small opening. Freeze at 0 F or below, do not overload. About 3 pounds per cubic foot. For fastest freezing place bags on shelves with space around them. Label and date before freezing.
