Egg freshness test by saline solution method
The text describes a simple test: dissolve two ounces of salt in a pint of water and submerge an egg. A fresh egg sinks to the bottom, a slightly older egg floats at mid depth, and a seven to ten day old egg rises toward the surface. The explanation: more evaporation of contents through the shell as the egg ages causes it to float higher.
