Iron Shortage Drives Anemia Risk Across Diets
Nutrition specialist Saily Springer of the Texas Agricultural Extension Service warns that iron shortages in regular diets cause anemia, especially among adult women, infants, and preschoolers. She notes infants may drink milk exclusively, while teens and women need more iron. adult men and postmenopausal women require about 10 mg daily. She lists iron rich foods such as egg yolk, dry beans, leafy greens, fortified breads, cereals, dried fruit, organ meats, poultry, meat, and fish as essential sources. Iron supports hemoglobin and oxygen transport, and stored iron can be depleted by blood loss and hemorrhage.
