Iowa State College professor M Mortensen explains how to make butter that stores well. Maintain low churn temperatures 40 minutes to an hour until granules form. Drain buttermilk, work butter firm, chill between workings, wrap in cloth or parchment, then pack in brine made with 35 lb salt to 100 lb water.
