Federal rules will allow slightly leaner beef to qualify for prime and choice grades starting Feb. 23 expanding the prime and choice grades and narrowing the U S good grade. USDA anticipates gains in lean meat production but consumer groups fear higher prices for cuts.
Officials say slight cuts in marbling fleck requirements will yield leaner beef in prime and choice grades. Previously higher marbling was needed to offset increased maturity in cattle. New research finds no significant eating-quality difference for cattle aged about 9 to 30 months.
