Chinese and Neapolitan Influence on English Hogs
The American hog stock differs from Welsh ancestors due to Chinese and Neapolitan breeds. Crossing Chinese hogs with English stock produced Berkshire, Essex, Poland-China, Small Yorkshire, and Suffolk lines. The Chinese hog fattens easily, shaping lean English hogs, while Neapolitan adds delicacy. The original Chinese hog has a long body, short legs, heavy jowls, small ears, short head, neck, and snout, with white or black or mixed coloration, white dominating.
