Dairy Trends in Canada Milk Production Rise to 17 Billion

Canada faces dairy balance as Ontario Quebec dominance grows

Ontario and Quebec produced about two thirds of Canada’s dairy output in 1954 with 65 percent of butter, 92 percent of cheese, 82 percent of evaporated milk, and 88 percent of dried milk. The provinces host most plants, shaping the ability to shift production. While per capita use rose for cheese, evaporated milk, and dried skim milk, fluid milk and butter lagged. A world butter glut contrasts with firm cheese markets and a dried skim milk shortage persists, underscoring structural reliance on eastern provinces for supply.

Balanced industry economy reduces butter storage surplus

The statement suggests that achieving a more balanced economy within the industry would lessen butter in storage and improve overall market conditions. It emphasizes the need for equilibrium to avoid excess butter stocks.
