How to Preserve Eggs by Lime Water Method Study
A Manitoba Agricultural College circular reports experimental work on egg preservation. Lime water method yielded firmer yolks and better poached eggs than water glass, with superior flavor and texture. Other methods including boiling water, wrapping in paper, and air solutions performed poorly. Copies are available free from the Manitoba Department of Agriculture.
