‘More about Chili’BY IOHN lAPlCKHaving this chili recipe contest has generated into an interesting experience. For one thing, I’ve learned that chili can be one of the most diversified recipes of any American food in the nation. Many books have been written about the subject, as well as popular cookbooks that will include a chili recipe. One Fairfield woman, who is a noted gourmet cooking-class teacher, told me she is happy with “Silver Palate's” cookbook chili recipe. I told her that it wouldn’t be fairto include that in the contest. “Oh I’d just add a little more ground cumin to it and make it mine,” she laughed. Then there are the no-bean “Chilians,” judges of chili cookoffs who believe that the use of beans in chili tend to overpower the true chili flavor. (I’m not one of them.) In Michael Stern’s book,Jane and“ChiliNation,” they wrote that historians credit Mexican families of San Antonio (before it became the Republic of Texas) with the genesis of chili. “ . . . They stewed beef and peppers, not only to stretch the quantity of the meal, but to use curry spices, to disguise the taste of less-than fresh provisions.”The midwest picked up the popular Tex-Mex dish. Intlu-enced by middle European immigrants, they added their own concoctions like spaghetti noodles, beans and oyster crackers. Chili was inexpensive and became popular with blue-collar workers at open-all night diners.Over the years, chili has become popular nationwide, crossing ethnic and social levels. It became very “in” among New York circles, and on the menus of the trendiest restaurants.Chasen’s restaurant of Beverly Hills was once famous for their fabulous chili, especially among the Hollywood crowd.Liz Taylor and Richard Burton had a supply flown to wherever they were in the world.
