D A Fletcher of the Canada Department of Agriculture notes rising liquid egg use by bakers, with several million pounds sold in 1963 mainly in Toronto and Montreal. Liquid eggs ship fresh within 24 hours, avoid freezing and storage issues, and come as whole, whites or yolks. Ontario tests bulk tank delivery. Quebec bakery plans own laying flocks. Frozen eggs still lead in volume, but liquid eggs expand as more plants enter production.
