Costly Mistakes in Preparing Poultry for Market

An unusual situation shapes the Canadian poultry trade this season with a large supply and strong US demand. Manitoba reports mostly good birds but many are badly killed or prepared, risking low prices and requiring inspectors certificates for inter provincial and export shipments. United States standards require singed and heads wrapped while Canada permits but does not require head wrapping. Common defects include blood in the mouth dirty feet foul vents and imperfect plucking.
