Lefse Making in Norwegian Christmas Tradition

In our family a Norwegian heritage tradition called lefse shapes Christmas. Lefse making, a passing of knowledge without written instruction, embodies how beliefs and customs travel through generations by example and practice.

Lefse Making Family Tradition Passed Down

A grandmotherly family rite centers on lefse production each year. After long days, 80 to 100 pounds of potatoes are peeled and boiled, riced with butter and salt, cooled overnight, then rolled on improvised equipment including large griddles, towels, canvas, a stocking, flour, a plastic tub, and a sharpened meter stick.

Potatoes and Lefse Make a Floury Family Tradition

Fay Asleson, head librarian at the Chetwynd Public Library, recalls a lively family lefse making ritual that lasts hours. Three roles mix potatoes with flour, roll and flip paddies on hot griddles, and test tasters critique dryness and salt. The process yields 300 to 400 paddies, leaves flour dust everywhere, and ends with cleaning and a festive, if messy, Christmas memory.
