Victorian cheese matured at low temperature study
Experiments in the United States and Canada tested cooling room maturing for cheese. Results show shrinkage reductions of about 6 to 9 percent, with cooler storage yielding cleaner flavor, better for shipping, though local consumption preferred the frostier sample. Multiple lots and conditions chased moisture loss and butter fat leakage in traditional methods.
