Said Lyman T. Hay o! the Jefferson in Saint Louis: “I believe that in the employment of colored waiters lies the cure for the evils of unionism. It has been my experience that white cooks do not strike where there are colored waiters. Thev have seen white waiters super-ceded by colored waiters and they fear that white cooks might be superceded by colored cooks.“We do not inquire of cooks whether they are union men or not. We keep the eight hour day and we pay good wages. Keeping the eight hour day is somewhat of an unreasonable demand on us but we agreed to it when we had our fight with the union and of course we must stick to our word even though the additional expense is unjust.“These colored waiters of ours have been a great satisfaction to us. We have much less trouble with our colored waiters than we had with the white ones. A colored waiter will help another waiter, but as a rule a white waiter will not help another white waiter in his service of guests. A white waiter will not even want his captain to help him, so from this guests are frequently given poor service because the white waiter will not let anyone assist him however large the order is that he is serving.
