There’s a vegetable dish that actually seems to smile. ‘Here are the recipes for these happy vegetable dishes; French Method of Cooking Peas, ‘Line kettle with lettuce leaves, 3 leaves. thick, The leaves ‘should ‘be washed and the water dripping from them, Place 2 Ibs. peas in this nest, with 1 tip. sugar, cover , tightly ‘so that the peas are steamed over low freat. Young peas ’ will cook in 20 to 20 min utes after steaming, begins. Larger peas may need 1 to 2 thsp, water added and should be cooked twice as ‘long. Remove lettuce, add butter, pepper and salt, and keep hot until time to serve. Be sure to serve juice formed at bottom of kettle as it is delicious. French Method of Cooking Canned Peas, 1 large mild sliced onion (or 3 to 4 tiny round onions.) 3 tbsp, butter. Small bouquet of finely minced herbs (St. Mary’s. herbs, or pars ley and a bit of thyme and bay leaf.) 1 tbsp, all-purpose flour. 1-2 cup milk (or liquid from canned peas.) One No. 2 can peas (2 1-2 cups), drained. Salt and pepper. Cook onion in boiling water until tender. Drain and add butter and finely minced herbs. Cook onion gent ly in butter a few minutes. Blend in flour and milk (or liquid from canned peas.) Add canned peas. Season, and serve. hot. Delicious Buttered Green Beans (Canned.) 3 tbsp. butter, 1-2 large mild onion cor 2 tiny round onions, finely chopped One No. 2 can green beans (2 1-2 cups,) drained and cut in small pieces. 1 tbsp. lemon juice. Salt and pepper. Melt bitter in saucepan. Add onions, and cook gently a few minutes. Add drained green beans. Sprinkle’ lemon juice, over beans, Season, and .serve hot. Mint Glazed Carrots and Peas. 4 cups diced ‘carrots, 1-2 cup butter. 1-2 cup sugar. ‘1 trsp. mint sauce. 1 No, 2 ¢an peas’ (2 cups.) 1-2 tsp. salt. Cook .carrots in small amount of boiling salted water 15 minutes and drain. Put in saucepan, with butter and sugar. Cook slowly until soft. and glazed, Add mint sauce, Heat peas thoroughly and season with salt. Drain the liquid from the peas and turn on hot serving dish Surround with carrots, Pour glazing liquid left from the car rots over the peas. Amount: 10 serv ings. Note: For Mine Sauce add 1 trisp, powdered sugar to 1-2 cup mild vinegar. Heat slightly. Pour over 1-4 cup finely chopped mint leaves. Let stand about 30 minutes before using.
