One of the most interesting and important matters up for discussion before the Southern Wisconsin Cheese-makers’ association convention atMonroe was the project of erecting in Monroe a great modern cold storage building. It is considered most essential that the cheese interests of this section should have the advantages of such a plant, and while the matter hasbeen discussed several times in the past it has always been allowed to drop.It is certain that Monroe must furbish ample cold storage facilities ifshe is to retain her place as cheese headquarters of this district. At present the surplus cheese is shipped to Chicago for storage, with the result that Chicago v made the Swiss cheese market instead of Monroe and Greencounty, where it properly belongs. Indeed many former Green county wholesalers have moved their headquarters to the big town.
