last week.—Your correspondent visited the “Stauffer Cheese and Butter factory,” owned and opperated by H. Clay Stauffer, Esq. it is elegantly situated at “DiehTs” Large Spring and only a few hundred yards from the F. R. R., which makes it very convenient for both water and shipping purposes.—Mr. T. H. Corbin j the gentlemanly manager, and his assistant Mr. Wolfe will accept many thanks for their kindness in explaining the process of manufacturing of butter and cheese, which we found very interesting. Also can say it is verv good. Mr. S. presented us with a fine sample. Mr. S. is manufacturing cheese in 6 to 10 lbs cakes, especially for family use.
