Begin by washing all jars in hot soapy water and rinse well. It is not necessary to sterilize jars since the pressure canner must be used in canning all non-acid vegetables.Use only fresh, young, tender beans. The bean should just be begining to form in the pod. Wash thoroughly, trim ends and cut into1-inch pieces. Thus far there is nothing different from the old method of canning snap beans, but you will notice that the fill is defferent.Pack raw beans tightly into clean jars to Vfe-inch of top. Cover with boiling water, again leaving Vi-inch space at the top of the jar. Add Vi teaspoon salt to pints and 1 teaspoon to quarts. Close 1 jaf with two-piece lid and place it in the pressure canner. Exhaust canner for 10 minutes, close petcock and process at 10 pounds pressure — pint jars 20 minutes; quart jars 25 minutes. Remove canner from heat, let pressure return to zero and remove the jars. This new one-step method can also be used for canning fresh lima beans, carrots, cream style corn, whole kernel corn, blackeyed peas and summer squash. For further information come by the office and pick up a copy of the “Home Canning of Fruits andDUNCAN HINES ^YELLOW CAKE MIX - Box33cMRS.
