On 'Wednesday add three pounds of boiled ami mashed potatoes. stir well and let stand until Thursday, then strain and put in jugs, but for the first day or two leave the corks loose. Rtir the yeast occasionally while making and keep near the lire. It should bo made two weeks before using, and will be improved by age.
