.Dean Gray, St. Olaf, won the beef carcass contest held in conjunction with Clayton Coun ty Pair according to Jim Hosch, county extension director. There were 15 market beef entered in this competition with the win ners being announced at Hy grade Food Products in Postville on Tuesday, August 13. Gary’s crossbred steer which was named the beef carcass champion had the following car cass data: choice, yield grade -= 1.5, rib-eye -- 15.9 sq. inches, fat thickness -- .2 inch, confor mation -- choice, marbling small, interior fat -- 3.00, and a carcass weight of 786 pounds. The steer weighed. 1145 pounds alive and had earlier been nam ed the rate-of-gain winner at the county fair with a gain of 3.61 pounds per day.
