OLD FRIENDS TO FIND HOLLY’S A CHANGED PLACEMany New Improvement*Are Made At LocalRestaurantSouth Haven’s summer visitors will find many improvements- at Holly’s restaurant and grill this yea \ Changes at the grill on Broadway near Fhoenix were completed several weeks ago but the many im-j provements in the restaurant, 214 Center street, were finished only in time to celebrate its 17th anniversary which occurs during National Restaurant week, observed from Mon-daj\ May 4 to Sunday, May 10.Diners at the restaurant will find the walls painted Wythehouse green, the same shade used in redecorating the grill “Wythehouse green will be the standard color in all our restaurants,” Ward Webster, owner, said. “The color also has been used in redecorating the St. Joseph and Eenton * Harbor Hoby’s establishments.”Next change to greet the visitor’s eye will be the attractive booths which have been installed in the center of the restaurant where tables were formerly placed. ‘‘The new booths make it possible to seat ten more persons than before,” Mr. Webster said. The backs are upholstered in a deep tan and the seats are done in maroon. The fabric used is a special composition, half rub-bet1, half cork, which wears better and is very easy to keep clean. A ‘family sine” booth, seating from eight to ten persons has been f placed at the rear of the restaurant.Tables on Stands ' 1The tables in the booths are mounted on stands centered so that they will not get in the way of the! customer s legs. The tab es also are movable and, as in the case of children, may be drawn closer to the diner. Getting in and out of the booths is also an easier matter than in some of the older models, and the two front center booths have chairs placed on one side for those who prefer them.The most important improvement is the serving arrangements. The kitchen has been opened so the waitresses put their orders on tickets which are sent through in rotation and'placed on the serving shelf when ready, making it unnecessary for the girls to enter the kitchen, and by making contact with the kitchen easier, speeding up service. ___________________________-.....Also installed in the kitchen is a new glass washer and sterilirer which will take care of 700 glasses an hour and eliminates towe.ing. Installation of the new sterilizer has hot yet been completed and other rearrangements in the kitchen also will be made. A washer and sterilizer for dishes is now in use, and the machine for glasses will give the restaurant two such pieces of eouipment.New UniformsWaitresses at both the restaurant ar.d grill have received new green and white uniforms, and a new candy department also has been addtiti, featuring Mrs. Steven's candies.The first Holly’s restaurant was established by Hollis Webster in the obby of the Webster hotel in May, 1925.
