Twenty years ago, this monthly expenditure was about $9,p00.When the milk arrives at the plant it is dumped into a weighing tank, from which it flows, to a drop tank in the basement and is pumped from there to the upper floors., All of the milk comes into the plant in 1,0-gal-ion cans, which are automatically emptied and washed ready for reuse at the rate of ten a minute.Little of Original MachineryThe interior of the building, consists of two floors, a basement and a mezzanine. In the two decades which have passed since the inception of the plant, practically all of the machinery has been replaced* The interior of the plant is now lined with white tile, and nearly all of the equipment is of stainless steel, replacing copper sheeted machinery.The plant has its laboratory room where the milk is given a rating on butterfat and tested for bacteria count. Experimental and research work is also carried on.There is a huge refrigeration unit, accommodating about 1,800 ten gallon cans. 1Use 15,000 lbs. Sugar Daily For sweetened condensed milk and ice cream mix, much sugar is used, sweetened condensed milk containing as high as 42 per, cent in sugar, which acts as a preservative. In peak i production periods, 15,000 pounds of sugar is used in a single day’? operation. Consequently, there is a large storage room for this sugar, which is received in carload lots.Milk is condensed in two condensing pans, ofte of five-foot diameter and the other of six-foot. Evaporating temperature is 135 degrees Fahrenheit. Of course, this also acts as ! Pasteurization treatment. Milk is reduced in volume by condensing to from 25 to 20 per cent of its original volume, depending upon the concentration desired.Processing dry SUnDry skim milk is obtained by spraying milk over steffmheated rollers from which the fine film is shaved as the roller turns past a blade on the exterior of the spray tank.When the pboduct is completed and cooled, it is ready for shipment inten gallon cans or barrels. The barrels, which are never reused, hold about 700 pounds of processed milk. The empty ones occupy considerable storage space in the plant.The deep water wells of the plant pump 450 gallons a minute and are in full use during operations. When the plant started, the 30*000-gallon daily output of the original pump was considered a large one.Thirty-Four Work in PlantIn the - plant proper, 33 men are employed under the supervision of John Lehner. George Bosse, traffic manager, has charge of the 11 truckers and two garagemen. Harry L. Anderson is office manager, assisted by a staff of four young women.
