(UPI) — A $40,000 federal grant to The Culinary Institute of America here will enable the chefs’ training school to establish a laboratory for studying proper hygienic maintenance of work areas where food is prepared.The grant from the U.S. Department of Health, Education and Welfare also will be used to develop additional sanitary methods of handling ’food.
