FARNIEYKnight Ridder News ServiceIf wc Americans don’t always make our own barbecue sauce, we still want more of a “from scratch” feel to our bottled sauce.Through research, Kraft Foods discovered that 50 percent of Americans add ingredients to their bottled barbecue sauce, andheld a contest to uncover some of the better doctoring secrets.From nearly 10,000 entries they got plenty of saucy ideas. After a heated competition, 50 state finalists were announced in September 1998. Out of those finalists, Californian Todd Leaf smoked the competition with his Southwest-style recipe. His secret ingredients: ancho chiles, spices and brown sugar. Leafis recipe inspired Kraft’s new flavor of barbecue sauce, called KRAFT Todd’s Southwest Recipe Barbecue Sauce. In addition to getting his image on the bottles, Leaf won the grand prize of $25,000.To create your own signature flavor with bottled sauces, try these popular add-iningredients used by contest entrants:Worchestershire sauce, hot sauces and soy sauce.■ Seasonings: black pepper, salt, seasoned salt, cayenne pepper, crushed red pepper, garlic salt, garlic powder, ginger and chili powder.■ Vegetables: onions, garlic, green peppers, hot peppers and red bell pepper.■ Sweeteners: brown sugar, honey, granulated sugar and molasses.■ Liquids: lemon juice, lemonade, water, orange juice, orange soda and pineapple.■ Fruits: pineapple, lemon, orange, lime, mango and peach.■ Out-of-the-ordinary: carbonated softdrinks, maraschino cherries, peanut butter,chocolate, Velveeta cheese spread, cream cheese and baby food.And when you’re ready to concoct some of your own sauces, follow Cheryl Alters Jamison and Bill Jamison’s advice and seek a balance of sweet, sour and spicy flavors. I he sweetening can come from some of the above ingredients, as well as from maplesyrup, cane syrup, hoisin sauce or evenCoca-Cola. Common sour ingredients include lemon or lime juice, tamarind concentrate and vinegar - cider, raspberry, wine, white, rice or sherry, among others. Add onions, garlic and just about anything from the spice rack. Salt or salty ingredients such as soy sauce are optional, according to taste.
