The remodelling program, which has been in progress since April has added nearly twice the capacity to the dining area and more than doubled the kitchen space. A total of 175 patrons can be accommodated.The restaurant is separated into three rooms, one of which is a private dining room which can seat 40 persons. The other two dining rooms have three large arches, which gives the effect of spaciousness. The front can be closed by means of modern leather, accorriion-effect doors.At the front are two picture windows, encased in birch. The chairs and tables are of imported birch and the chairs are upholstered in chartreuse leather. * * *TWO 16-FOOT long counters line the south wall of the room to the north and the south dining room has a wall seat in chartreuse leather running the length of the room. The entire end of that room is panelled in walnut and. birch.In contrast to this the walls are of a fuchsia shade, while in the north room the wall is chartreuse, with a darker green trim.A telephone booth for the convenience of the guests has been installed in the front of the south dining room and at the rear is a woman’s rest room, completely tiled in a rose beige shade.The accoustically treated ceilings help to deaden noises and the concealed lighting arrangements give soft illumination.THE KITCHEN has been completely modernized with an 8x10 walk-in cooler, a 24-pie capacity oven, an ice cube maker, dishwashing machines, a machine which washes, sterilizes and dries silverware independently, steam cookers, potato peelers and three batteries of ranges.It is so arranged .to provide efficiency and convenience for the employes of the kitchen.Fred Salisbury' who has operated the restaurant at this location for the past seven years said that there are a total of 21 employes, including nine in the kitchen and 13 in the dining room.William Caraway, with 25 years experience in culinary art, is the head chef. Mr. Caraway has been employed in north western Ohio for the past 25 years, ♦lost recently being affiliated* O * * O *with the Congress restaurant in Lima. He served under Charles Rector and Paul DeWorld, nationally famous chefs and for sue and a half years was with the Harvey restaurant system.THE MORNING cook, Mrs. Rosa Brown marked her 29th anniversary last June as an employe of a restaurant in that same location. She first worked for the old Avondale restaurant as a waitress. After 12 years as a waitress she became cook and has held that position since.Eva Clymer is pastry cook and Prudence Hepner is in charge of the salad department. Two other longtime employes in the kitchen are Adell Soufflett who has worked at that location for 14 years and Mary Cameron for 10 years.Mabel Patte/aon Is hostess and cashier.Mr. Salisbury said yesterday that the public is welcome throughout the day and evening hours Friday and Saturday and any who desire may inspect the kitchen and its new equipment.
