Hope Cheese, lb.....19c Salads Should Play Big Part in Menus Dear Friends in Wisconsin Rapids Cool, appetizing salads made in tKe refrigerator should play an im- portant part in your summer menus Plain gelatine, fruits, vegetables anc canned seafood such as lobster anc shrimp, chicken, ham and left-over cooked vegetables all may be incor- porated in making these dishes. For example, a salad such as the one illustrated, is made with shrimp. Shrimp Mayonnaise Mould One package lemon flavored gel- atine; one_p_int warm water; two tablespoons vinegar, one teaspoon salt; one and one half cups shrimps, halved; one quarter cup green pep- per, chopped; two tablespoons pimiento, finely chopped; one half cup mayonnaise. Dissolve gelatine in the two cup: of warm water. Add vinegar and salt. Chill. When slightly thickened, fold in remaining ingredients. Blend. Turn into mould or individual moulds wet with ice water. Chill un- til firm in the refrigerator. Unmould on crisp lettuce. Garnish with thin slices of hard cooked egg. Serves six to eight. Jellied Consomme Four cups clear soup stock; one third cup cold water; two table- spoons gelatine. Soften gelatine in the cold water. Add to the boiling hot stock. Set aside to cool. Then chill refrigerator and serve in cups. Clear tomato soup can be used in place of part of the soup stock or juices may also be used. Jellied bouillon can be made, us- ing the brown soup stock. Six serv- ings. Jellied Mold of Chicken Three cups chicken meat; one pint chicken stock; one hard-cooked egg; one tablespoon gelatine; seasoning. Dissolve gelatine in one-third cup cold water. Add chicken stock which has been heated to boiling point. Pour small portion into mold and place in refrigerator until mixture begins to set. Add slices of egg and replace in refrigerator until firmly pot. Then add remainder of stock. Place in refrigerator until mold is firm. When ready to -erve, unmold on crisp lettuce. Garnish with stuff- ed olives and rosettes of mayon- naise. Six to eight servings. Cottage Cheese Mold One pound cottage cheese; one tablespoon chopped parsley; one and one half tablespoons cream; salt to taste; pimiento. Mix thoroughly ,the above ingre- dients. Line a lectangular re- ceptacle with thin wax paper. Pack in thin layers of the cheese, placing two or three paiallel strips of fresh or canned pimiento between layers. Place in refrigerator until ready to serve. Run knife around the sides and invert the mold. This can be sliced and placed on lettuce leaves. Serve with French dressing and wafers or with thin bread and but- ter sandwiches. Minced olives, chives or watercress may be used in place of parsley. Chopped nuts may also be combined, or used to top each serving. Serves six. Tomato Aspic Three cups stewed tomatoes; one onion, sliced; one stalk celery; one bay leaf; one clove; one teaspoon sugar; salt; one tablespoon gelatine; one half cup cold water; lettuce; Mayonnaise. Cook tomatoes with seasonings. Scak gelatine in cold water and add to hot mixture. Strain and allow to cool, then mold in cups about the size of a tomato. Chill in refrigera- tor. Serve on individual plates on crisp lettuce. Dress with tablespoon of mayonnaise on top of each mold, adding a dash of paprika if desired. Eight servings. Frozen Cress Salad Two three-ounce cakes cream cheese; one half cup stuffed olives one teaspoon salt; one half cup cream; one quart measure wa- tercress; one half cup mayonnaise; two cups whipping cream. Cream cheese by adding one-half cup plain cream slowly. Then add mayonnaise in same manner. Place in refrigerator to keep cool while others ingredients are being prepared. Whip cream and return to refriger- ator to keep cool. Break crisp watercress into parts approximately one-inch long, dis- carding coarse stalks. Fold whipped cream into cheese mixture. Add olives and watercress. Pour into freezing tray and allow to freeze without stirring. Serve on crisp lettuce. Garnish with stuffed olives, cutting the olives lengthwise. Six to eight servings.
