it may not ho exactly orthodox or pootica to say so tho Christmas dinner boll brings substantial joy to tho heart of tho ordi nary mortal It suggests a feathering of old frionds find relatives round a board spvoad with turkey roast beef plum pudding and other good things a Christ mas tree iaderi with gifts for the littlq ones and a mistletoe for tho pretty maids However it is not of a jolly old fashioned house party like this I want to toll you but just what a 1ew of 1hc New York swells will eat on Christ mas day 1800 Kitchens of big society houses aro already like bee hives arid during intervals when tho chefs aro not busy preparing the daily menus they are concocting somo raro new dishes to be served oil this mam moth least day in December There never was a more appreciative further on whoro tho legs aro I put slices of beef tonguo The front of tho breast is then garnished with trullles and a boquet of chestnuts A delicate cream gravy is served with this dish which when carved presents the lovely effect of red black cream and brown meat in aHer natso sections Mrs William Astors Christmas din ner will be served to about fifteen guests on her famous dinner cloth of violets in the upper lefthand corner will be his favorite Puree of Asparagus a la From two large bundles of asparagus break off heads so far they will readily snap tlieso into a large pan of coiu water with a handful of spinach tho same quantity of parsley and green onions Set on the lire a largo stew pan halffilled with boiling water to which add a handful of salt in it Drain tho asparagus into a collondor and put tho whole into tho stow pan to boil IasL After cooking drain them thoroughly again and let somo cold wutcr run over them so that they may retain their greenness Then put them into a middlesixed stew pan with a quart of good Velouto sauce a table spoon of powdered sugar and a little grated nutmeg and salt Stir the whole on a brisk lire until it has boiled three minutes Then pass it through a tammy cloth or sieve into a largo dish After transferlng into a soup pot place It on the larder whoro It may keep cool and retain its green color and delicate flavor IiMve minutes brisk fire until tho soup is nearly boil ing After that mix in a pat of butter and a small piece of lightcolored glace and send it to tho table with a plate of croutons Mrs John lloodgood wife of tho
