Deep dish peach pie ten to twelve Ripe peaches pared and sliced one Tablespoon Lemon juice one fourth Teaspoon Almond extract two thirds cup granulated sugar one third cup Brown sugar firmly packed one eighth Teaspoon Salt one Tablespoon Quick cooking tapioca one Tablespoon butter Combine peaches Lemon juice Almond extract sugars Salt and tapioca. Mix together thoroughly and let stand while rolling pastry. Arrange peaches in greased baking dish. Dot with butter. Roll dough one fourth Inch thick and of a size to cover baking dish allowing one Inch All around. Fold in half Cut several one half Inch slits on fold.
