Just before steak is ready, heat Worcestershire sauce, cheese, and lemon juice over low heat to make a sauce. Place steak on serving plate and pour sauce over the top and serve. Serves 1. MARGARITA PIE Source: Pillsbury Fast and Healthy Cookbook 1 pkg. (8oz) cream    House Margarita Mix cheese, softened    1 carton (8oz.) Cool Whip 3/4 cup sugar    1 pre-made Graham 2 packages Holland    Cracker Crust Cream the cream cheese until fluffy. Add mar-garita mix and sugar; beat until smooth. Add Cool Whip and mix. Freeze in graham cracker crust until ready to serve. Serves 8. FRUITY PANACOTTA Source: Kraft Foods 1 (32 oz.) plain nonfat    1 pkg. (8-serving size) yogurt    JELL-0 Strawberry Sugar 1 cup sliced strawberries    Free Gelatin Mix yogurt and dry gelatin in medium microwaveable bowl. Microwave on high 2-1/2 minutes or until gelatin is completely dissolved, stirring after 1-1/2 minutes. Pour into 9-inch pie plate sprayed with cooking spray. Refrigerate 3 hours or until set. Unmold gelatin onto serving plate.Top with fruit just before serving. Serves 8. TACO SALAD TOSTADA Source: Kraft Foods 1 pkg. (14.25 oz.) Taco    1 tomato, chopped Bell Taco Dinner Cheesy    1 lb. ground beef Double Decker    1-1/2 cups shredded 1-1/2 cups shredded let-    cheddar cheese tuce Preheat oven to 350°F. Spray both sides of tortillas with cooking spray, then place in a single layer on baking sheet. Bake 10 min. or until crisp and lightly browned. Cook and season meat with Taco Seasoning as directed on package. Spread each tortilla with 1 Tbsp, of the Nacho Cheese Sauce; top with meat mixture and lettuce. Crumble 1 taco shell over each tostada; top with tomato and cheese. Serves 8. CARAMELIZED GARLIC CHICKEN Source: Pillsbury Fast and Healthy Cookbook 2 teaspoons olive oil    4 garlic cloves, minced 4 teaspoons brown sug-    4 boneless skinless chick- ar    en breast Heat oven to 400 degrees. Line shallow roasting pan with foil; spray with nonstick cooking spray. Heat oil in small nonstick skillet over medium-low heat until hot. Add garlic; cook 1 to 2 minutes or until garlic begins to soften. Remove from heat; stir in brown sugar until blended. Place chicken breast in foil-lined pan; spread garlic mixture evenly over chicken. Bake for 15 to 20 minutes or until chicken is tender and juices run clear. Serves 4. Desserts, dishes using few ingredients By Ann Cousin Correspondent The mainstay of every cook’s repertoire is a collection of recipes for quick main dishes that practically make themselves. Quick and easy recipes do more than just provide fast food. They take advantage of easily prepared, quick-cooking ingredients and minimum equipment so you are in and out of the kitchen fast. When you cut right to the chase, the best way to save time in the kitchen is to limit the number of ingredients you use. That automatically limits the time you spend measuring, washing, chopping, stirring and grating for any recipe. Sometimes, the simplest solution is the most elegant. Pared-down but sophisticated dishes with just a handful of key ingredients can maximize the flavor and minimize the fuss. If a recipe takes only 20 minutes to prepare but you spend an additional 30 minutes cleaning up, then it is not really very speedy. Even though they may love to cook, most busy working women have little time to do so. After a long day at work, its best to keep things simple, but still unique and delicious. QUICK MEAL TIPS ■ Make as many hamburger patties as you want to serve, and place each one on its own square of aluminum foil. Salt and pepper, add a few rings of raw onion and a few slices of raw potato. Fold up the aluminum foil like you were wrapping a present so it won t leak, put it in a 350 degree oven and bake for about 45 minutes or until done. No pans to wash! ■ Quick meatloaf. In a large bowl, combine one pound hamburger, one egg, one cup of oatmeal (uncooked), 1/2 cup ketchup and 1/2 cup chopped onion. Mush it all together and put it in a loaf pan. Put a nice wide stripe of ketchup across the top. Bake in a 350 degree oven for about an hour. Wrap some potatoes in foil and bake along with it, same tempera ture and same amount of time. ■ For a quick pot roast, place a roast in your crock-pot, along with 2 cups water, 2 bouillon cubes, 2 cloves of garlic, peeled and chopped, and one onion, chopped. Put the lid on, turn the crockpot on simmer, and go do something fun. After 4 to 6 hours, add some peeled quartered potatoes along with some carrots, cut in chunks. Put the lid on again. In about 45 minutes to an hour, when the veggies are tender, serve to your admiring family. ■ Easy chicken and rice dish. Mix a can of cream of mushroom soup (not diluted) with half a cup of regular rice (not the instant kind). Spread it in the bottom of a casserole dish. Put pieces of chicken over the top of it. Bake at 350 degrees for 45 minutes to an hour until done and juices run clear. The juices from the chicken drip onto the rice and make a yummy rice dish to serve with the chicken.Bret Graham to perform in acoustic show tonight at Rudy’s It s good to be a Bret Graham fan these days. First of all, he just released the fantastic new CD titled “Soldier," and now he’s booked to play a series of live shows around town. He gets the live music kicked off in fine fashion tonight with a free acoustic show at Rudy’s BBQ, located at the comer of Highway 46 and Common Street. The music starts about 5 p.m. and lasts until 8 p.m. Then, Saturday, Bret has double duties at Gruene I {all. First, he plays a free show from I -5 p.m., and returns at 9 p.m. to open for Gary R Nunn. There’s a $ IO cover charge for the late show. Graham returns to Gmene Oct. 8 to take part in the 19th Annual Gruene Music and Wine Festival. He and musician Briane Keane will perform at the Texas Tastings & Times portion of the festival near The Grapevine, located across the street from historic Gmene Hall. On Sunday, Bret will host a very special Gospel Brunch at 10:30 a.m. featuring Buckner Fanning, the Bells of Joy and Selina Affiram.■ ■■ Saengerhalle comes alive this week with a Friday night show by the Randy Rogers Band. They are currently on the road promoting their "Live at Billy Bob’s” CD and will be dropping by Saengerhalle to bring their exciting live show to town. The band got their start at another historic Texas dancehall, Cheatham Street Warehouse, in October 2000 and have been building a solid fan base ever since. Years of touring and releasing stellar independent albums finally got the attention of Mercury Records, and on Aug. 6 of this year, they inked a deal with the Nashville label. The band will enter an Austin studio later this year to record their major label debut with pal Radney Foster handling the producing duties. So, saying that the band is one of the hottest acts on the Texas music circuit today would be a major understatement. Come out to Saengerhalle on Friday night to see what all the fuss Is about and don’t forget to pick up a copy of their latest CD, “Live at Billv Bob’s.”■ ■■ Making his regular monthly appearance at the Adobe Verde Restaurant in Gmene, guitar wizard Monte Montgomery will surely be playing to a packed house Thursday so get there early to get a good seat. His reputation as one of the best guitar players in the world is shared by not only his fans, but by most of the prestigious guitar mag azines in America. Since he began doing these intimate acoustic shows at the Adobe, fans across south Texas have been showing up to winless his amazing guitar prowess. Things get started about 7 p.m. and Monte normally performs several hour long sets. Monte will also be talking about the upcoming Salsa Festival he ll be hosting with his pal Paul Moler. owner of Adobe Verde. The festival will take place at 2 p.m. Oct. 30 and is free to the public.
