Mireya has a dentist appointment in July, and to say she's not looking forward to it is like saying polar bears aren't looking forward to global warming. For some unknown reason, both daughters seem to hold onto their baby teeth even when the adult teeth are pushing right through. I'm sure there's some sort of cosmic metaphor there, but I don't want to think about it. So, her next dental appointment is going to involve pulling that tooth. But maybe not. I heard a squeal and she ran into the bathroom where I was getting the tub ready. "Look, it's wiggling!" she demonstrated. Sure enough, the once-stiff little tooth was moving back and forth, apparently willing to cut loose after all. "That's great!" I said. "But you've only got a week left. You better wiggle that tooth like there's no tomorrow." "No tomorrow?" she as|<ed "Yes," I said. "What would you do if there was no tomorrow?" You'd think such a statement would be a little morose for an 8-year-old. Not a chance. Her eyes lit up. She started ticking off an impressive list. "First, I'd go to Hawaii." "Great idea, I want to go, too," I said. "No, Asia!" Asia has been her goal since she learned that's where snow leopards, her favorite animals, live. "But I need to learn Chinese." Do you have anything that includes won ton wrappers? — Helen Texas Stars (Peggy Hoffman) 1 pkg. uncooked won tons 1 lb sausage, browned and drained 8 oz bottle ranch dressing 2 cups cheese, shredded 1 red pepper, chopped 1 sm. can black olives, chopped Mix all ingredients together in a bowl. Using a muffin tin, press one won ton into each muffin tin. Bake won tons at 350 degrees for five minutes. Remove from oven. Fill the wraps (won tons) with the mixture and bake five to seven minutes longer. 4th off July Cupcakes Makes 48 cup cakes Bake 44 minutes Cool 1 hour, 30 minutes 1 (18.25 ounce) box classic white cake mix 1 1/3 cup whole milk 1 (18.25 ounce) box red velvet cake mix 1 1/4 cups whole milk 1(16 ounce) container vanilla frosting 1/2 tsp. clear vanilla extract 1/3 cup confectioners sugar Sprinkles — red, white and blue Garnish — small flags Line two (12-cup) muffin pans with paper liners. Prepare and bake white cake mix according to package directions for cup cakes, substituting 1 1/3 cup milk for water. Let cool in pans for 10 minutes. Remove from pans, cook completely on wire racks. Repeat procedure with red velvet cake mix for cupcakes, substituting 1 1/4 cup milk for water. In a small bowl, stir frosting, vanilla and confectioner's sugar. Spread frosting evenly over cupcakes. Strawberry Fields Salad 4 large nectarines, cut into 1/4-inch-thick wedges 3/4 cup Lemon-Poppy Seed Dressing, divided 1 (10-oz.) package gourmet mixed salad greens 2 cups sliced fresh strawberries 1 (4-oz.) package crumbled feta cheese I large green tomato, diced * 1/2 cup chopped fresh basil II (3.5-oz.) package roasted glazed pecan pieces Toss nectarines with 1/4 cup Lemon-Poppy Seed Dressing Layer gourmet mixed salad greens, nectarines, strawberries, and next four ingredients in a large glass bowl. Serve immediately, or cover and chill up to eight hours. Toss salad with remaining 1/2 cup dressing just before serving. *1 1/2 cups halved miniature heirloom green tomatoes may be substituted. Lemon-Poppy Seed Dressing Makes 11/3 cups 2/3 cup vegetable oil 1/2 cup sugar 1/3 cup fresh lemon juice 11/2 tbsp poppy seeds 2 tsp finely chopped onion 1 tsp. Dijon mustard 1/2 tsp salt Process all ingredients in a blender until smooth. Store in refrigerator up to one week; serve at room temperature. Preheat oven to 400 degrees. Combine flour and next four ingredients in a large bowl. Make a well in the center of mixture. Combine buttermilk and next six ingredients in a bowl. Add to flour mixture, stirring only until mixture is moist. Spoon into 12 muffin cups sprayed with cooking spray. Sprinkle remaining sugar on the on the muffins, if desired. Bake at 400 degrees for 18 minutes or until lightly browned. Remove from muffin pans and cool on wire rack.
