New Braunfels Herald Zeitung (Newspaper) - July 27, 1995, New Braunfels, Texas Herald-Zeitung □ Thursday, July 27,1995 □ 9Gay Forties Club members enjoy Sesquicentennial luncheon By MARIE OFFERMAN Special to the Herald-Zeitung On Wednesday, July 12, 1995, about 200 members and guests of the Gay Forties Club gathered at The First Protestant Church Schumann Hall to enjoy a “Back to the Future” Sesquicentennial Luncheon. Preceeding the luncheon, punch was served and participants enjoyed viewing a large selection of New Braunfels memorabilia which was assembled by the hostess committee. The committee consisted of Cora Jane Welsch, hostess chairperson and members Ora Becker, Janelle Berger, Jane Brummett, Nancy David, Karon Haas, Nancy Johnson, Jan Kennedy, Nancy Peevyhouse, Jo Ann Robi-nett and Florinc Schleicher. Round tables were draped with alternating green and white cloths. They were centered with colorful periwinkle and petunia plants displayed in antique boxes and baskets. The plants were given to one lucky person at each table. The program, presented by Kathy Tal-cott, consisted of her vocal renditions reflecting four different periods of New Braunfels history. The songs included “After the Ball,” “It’s a Long Way to Tipperary,” “Chattanooga Choo-Choo” and “Climb Every Mountain.” She was accompanied on the piano by Clare Smith. Sesquicentennial related door prizes were awarded to: Mary Owens, Nancy lkels, Libby Fischbeck, Gwen Arnold, Bernice lkels, Mary Dean Richards, Mary Adel Schneider, Mahon Hendricks, Nancy Peevyhouse, Ruth Heitkamp, Jan Kennady, Pat Wingfield, Ruth Cole, Mary Ann Thompson, Dana Scheel and Mary Virginia Brinkley. Recipes for the luncheon menu were taken from the Sophienburg “Gutcn Appetit”—a cook book featuring recipes that have been handed down in families, to contemporay recipes, remedies and household hints. Carrot loaf, a recipe submitted to the book by member Esther May Burt, was served. The sweet ending was pineapple coconut cake. The luncheon was catered by Clear Springs Catering and Decorating. Guten Appetit!Carrot Loaf I cup cooked carrots, mashed I cup chopped pecans I cup bread or cracker crumbs 1 stalk celery, chopped fine 2 tablespoons butter 2 eggs, well beaten Hostesses for the Gay Forties Club luncheon are left to right: Cora Jane Welsch (hostess chairperson), Jo Ann Robinett Jan Kennady, Janelle Berger and Nancy David. The hall was decorated with Sesquicentennial flags and New Braunfels memorabilia. Hostesses wore white outwork aprons. Also on the hostess committee are left to right: Nancy Peevyhouse, Jane Brummett, Ora Becker, Nancy Johnson and Florine Schleicher. Karon Haas was also a hostess, but not available for the picture. Jane Brummett holds one of the old photos which were displayed. The picture is a “Tom Thumb Wedding” and many club members are in the picture. 2 teaspoons sugar salt and pepper to taste Mix all the ingredients well. Put in a well-greased baking dish. Dot with butter. Bake at 350 degrees for thirty min utes. From: Mrs. Shelly (Esther May) Burt Pineapple Coconut Cake 1/2 cup butter I cup sugar 1/2 teaspoon salt 1 teaspoon vanilla or lemon flavoring 2 eggs (plus 2 egg yolks from icing) 2 cups cake flour 2 1/2 teaspoons baking powder 3/4 cup milk Blend butter, sugar, salt, flavoring and eggs. Alternately add sifted dry ingredients and milk. Pour into two greased 8-inch layer pans. Bake 30 minutes in moderate oven (350 degrees). Put layers together with pineapple filling. Frost top and sides with seven minute frosting and sprinkle coconut over top and sides.Pineapple Filling: 2 cups crushed pineapple, juice and fruit    "• 2 tablespoons cornstarch 1/2 cup sugar 1 teaspoon lemon juice Mix cornstarch and sugar, add crushed pineapple and lemon juice. Cook slowly until thick and clear. Cool.Seven Minute Frosting: 2 egg whites, unbeaten I 1/2 cups sugar 5 tablespoons cold water I 1/2 teaspoons light com syrup I teaspoon vanilla coconut Put egg whites, sugar, water and com syrup in upper part of double boiler. Beat with rotary egg beater until thoroughly mixed. Place over rapidly boiling water; beat constantly with rotary egg beater and cook 7 minutes or until frosting will stand in peaks. Remove from heat; add vanilla and beat until thick enough to spread. Sprinkle coconut over top and I sides of frosting after spreading frosting; on cake. Note: Always add 1/2 teaspoon i of vinegar to frosting when finished beating to keep it from getting hard. From: Mrs. H. A.
