Taste of Home school really cooking on Sept. 13

Home Economist Margaret McCutcheon is looking forward to her upcoming visit to New Braunfels, where she will host the Taste of Home Cooking School on Sept. 13.
With nearly 5 million subscribers, Taste of Home is the most popular cooking magazine in the world. Each attendee will get a free cookbook with more than 150 recipes, including the IO featured demonstrated dishes. The host home economist also shares time-saving tips for preparing and serving good food.
“People today are very interested in food preparation,” said Sandy Bloom,
executive director of the Taste of Home Cooking School. “Just look at the growing

“It’s no wonder these Taste of Home Cooking Schools are so popular,” said Angela Benson, advertising director with the New Braunfels Herald-Zeitung. “They feature onstage how-to demonstrations, kitchen appliances, new food products, kitchen time-savers, loads of fun and great prizes.”

In addition to the free cookbook, show goers get a free “gift bag” with items provided by the sponsors.
“There are drawings for lots of door prizes, too,” Benson said. “I’m sure everyone who attends will have a great time.”
Doors for the event open at 5 p.m. Sept. 13 at the New Braunfels Civic Center. ’The school begins at 6:30 p.m.
Benson said only a few tickets were left. Advance tickets are available for $6 each at the New Braunfels Herald-Zeitung, 707 Lands St.
Booths will be available.

Feeding your family without starving your wallet
Are you trying to save money by reducing your food costs? Being a thrifty shopper takes some skill, but there are ways that consumers can lower their food costs.
Keep a “short list” — a list of items you need to buy. When you run out of something, write it down as soon as possible. The short list lets you know which foods you need to buy and helps to cut down on multiple visits to the store.
Study the store’s sale advertisements. Be careful of loss-leaders. A loss-leader is a product advertised by a store for a very low price. Consumers will often go to that store to get that low-priced item, but end up buying other foods or products they might not have planned to buy.
Look at the foods you already have on hand. Use these foods, along with store specials, to plan your meals and snacks. Foods in your pantry, refrigerator or freezer represent valuable food dollars. If the food spoils or goes uneaten, then that money is wasted.
After you plan your meals and snacks, make a shopping list. Be sure to include the items on your short list.
Check your coupons to see whether any can be used with the items you have on your shopping list.
Make a list of non-food items (soap, laundry products, personal care items). Can you buy these from a discount store? Do you have coupons for any of these items?
When shopping, consider store brands over national brands to save money.
Even with coupons, some store brands might be cheaper. Use unit pricing to help spot the most economical buys.
Think twice about convenience foods. Pancake and cake mixes, along with canned soups, fruits and vegetables, can help you save time and money.
Other foods like frozen dinners and coating mixes for meat and poultry might not save you enough time to justify the cost.
Check out bakery thrift stores for great buys on bread. Save money on fruits and vegetables by shopping at the farmers’ market.
If possible, shop alone, when you are not hungry and when the store is not crowded. This helps you get in and out of the store in the shortest amount of time. Store food properly to maintain quality and to avoid spoilage.

Stir tomato mixture into ground chicken and simmer over low temperature about 20 minutes. In medium bowl, mix together remaining one tablespoon of parsley, remaining 1/2 teaspoon of salt, cottage cheese, egg and pepper.
In two-quart shallow baking dish, spoon a little of ground chicken mixture.
Then layer uncooked noodles, cottage cheese mixture, mozzarella cheese, Parmesan cheese and ground chicken mixture. Repeat layers but save Parmesan cheese for topping. Cover and refrigerate overnight. Bake in a 375 degree oven for 30 minutes. Let stand about IO minutes and cut into squares. Makes six servings. (For larger crowd, prepare recipe twice.)
CHICKEN PESTO PIZZA National Chicken Council
I package (IO oz.) of Italian-flavored, fully cooked, carved chicken breast (or any other cooked chicken breast)
I 12-inch thin, pre-baked pizza crust
I jar (2.82 oz.) pesto I jar (6 oz.) marinated artichoke hearts, drained and chopped
1/2 cup of grated fontina
1/2 teaspoon of freshly ground pepper
Spread pizza crust with pesto. Sprinkle with chicken, artichoke hearts and grated cheese.
Season with freshly ground pepper. Place on pizza stone or baking sheet and bake in 450-degree oven for about IO minutes or until cheese begins to brown. Slice and serve hot. Makes four servings.

I cup of red bell peppers, chopped
I scallions, chopped 1/2 cup of celery, chopped 1/2 cup of sweet gherkin pickles, chopped
4 hard-boiled eggs, chopped
1 1/2 cups of mayonnaise 1/4 cup of sweet pickle juice
2 teaspoons of mustard Salt and pepper to taste
DO-AHEAD GROUND CHICKEN LASAGNA National Chicken Council
I pound of ground chicken I can (16 oz.) tomatoes I can (6 oz.) tomato paste I 1/2 tablespoons of chopped parsley, divided I 1/2 teaspoons of salt, divided I teaspoon of basil 6 ounces of lasagna noodles I carton (16 oz.) of low-fat, small-curd cottage cheese I egg, beaten 1/4 teaspoon of pepper 6 ounces of skim milk mozzarella cheese, shredded 1/4 cup of Parmesan cheese
In a large frypan over medium high temperature, place chicken and brown, stirring, about five minutes. Into food processor container, place tomatoes, tomato paste, 1/2 tablespoon of the chopped parsley, one teaspoon of the salt and basil; process one minute.
