Eggplant casserole 1 Large eggplant 2 tomatoes 2 tbsp butter or Margarine v2 cup thinly sliced onion i tbsp chopped Parsley or dry flakes 1 tsp. Salt few grains of Pepper 2 tbsp melted butter a cup dry bread crumbs a cup grated Parmesan cheese Peel eggplant and Cut into half Inch cubes. Cook in boiling salted water for approx. 6 minutes. Drain. Scald and Peel tomatoes and Dice coarsely. Melt the 2 tbsp butter in a Skillet and saute onion until tender. Heat oven to 350 degrees and mix eggplant tomatoes onion and seasonings.
