Lethbridge Herald, The (Newspaper) - October 12, 1973, Lethbridge, Alberta 20 THE LETHBHIDGE HERALD Friday, October 12, 1973 Quiet wedding out for royal bride LONDON The cake is baked the invitations are out and scissors tire snipp- ing away at fine fabrics for the royal wedding gown Every last deisil of the dress is being kept close secret right up to the morn- ing of Princess Anne's marriage to cavalryman Mark Phillips Nov. 14. Even the guest list, something like 1.200 names, is being kept dark until nearer the day. It is all part of the buildup to the biggest nnal spectacular seen in Britain for more than a decade. The 23-year-old Anne, only daughter of Queen Elizabeth, was reported to have fancied a quiet wedding but stood no chance of getting her way. She will be the llth royal bride to be married in West- minster Abbey in the last 700 years ,ind the third since her mother was a bride there 26 years ago In between came the marriages of Princess Margaret, the Queen's sister, in I860, and the Queen's cousin. Princess Alexandra in 1963. FIRST ON COLOR TV In some ways the celebrations will be more vivid than ever. Anne is the first British royal bride to get the benefit of color television A recording of her wedding vows to the handsome Captain Phillips is expected to leap straight into the best-seller charts NATO is being temporarily weakened by 200 men so that the bridegroom's regiment the First Queen's Dragoon Guards based at Hohne in West Germany can be amp- ly represented on the big day. Most of the day's television viewing in Britain will be given over to the wedding. It will also be available to one of the largest television audiences in history, es- timated at 500 million people in 16 countries. Broadcasters will carry reports in 40 languages, from Russian and Hungarian to Thai and Vietnamese. The first part of their married life will be in an of- ficers' married quarter dwelling, near Sandhurst military academy southwest of London The 25-year-old Captain Phillips, whose regi- ment long ago gave up horses for tanks, is being posted to Sandhurst as an instructor PAY WILL DO As a captain his pay will be a year, somewhat less than the wage of an average London policeman. But Anne will draw a year from the royal purse. Sandhurst is probably not the location Anne would choose for a permanent home, and friends think they may eventually settle for a house in the area of southwest England where Mark's parents live in a comfortable 16th century manor. The Phillips family is well off without being extravagant- ly rich. Mark's father has business interests in the food manufacturing industry. The inhabitants of Great Somerford, nearest village to the Phillips' home, take a proprietary pride in the romance When Anne and Mark drop in at the local pub, a place called the Volunteer Inn. drinkers studiously avoid intruding on their company. For her dress, the princess avoided more formal cour- turiers and went to the pop- ular fashion house of Susan Small. The 'main design has already been chosen but a few more details remain to be decided before sewing begins. Every seamstress has been sworn to guard the secrets of a creation which, if leaked in advance of the wedding, could reap thousands for a rival fashion house. Top squad in Canada The senior cheerleaders from Catholic Central High School have been chosen to compete in the an- nual National Coca-Cola Award against 150 other squads from the United States, Mexico and South Am- erica. The girls were chosen on the basis of their per- formance during summer cheerleader clinics and will be presented with a gift certificate and commem- orative plaque if they place among the five finalists. HESS New York Times Service NEW YORK The world's cuisines are basically the product of thousands of years of efforts by women to make the best of what comes to hand A triumph of such endeavor is the bouillabaisse. Fishermen's wives around Marseilles developed this stew long ago to make palatable the trash fish that their husbands could not sell at market. It was so fine a solution that in recent decades the chefs of swank restaurants have taken to serving it. But they usually dress it up and justify a fan- tastic price by adding lobster or other costly sea food. This is what Thorstein Veblen would have called conspicuous consumption; lobster does nothing for a bouillabaisse, and bouillabaisse does nothing for a lobster An authentic bouillabaisse cannot be made without the trash fish of the Mediterranean, notably the rascasse. But wherever there are fishermen's wives, great fish stews are to be found. In France alone, every port has its variation. From the word chaudree, meaning what is cooked in a chaudron or cauldron, comes our word chowder which is of course, our solution of the same problem- how to make cheap or trash fish taste good During hard times, a weekly- staple in our family was a chowder made of the head and shoulder (or neck) of cod Our grown children still ask for it when they visit home, but it is no longer always easy to find the makings, and they are no longer cheap. Commercial fishing fleets nowadays fillet their catch and discard the remaining two-thirds of the beast which has the most flavor And home cooks who do have access to whole fish usually discard the head, tail and car- cass, which would make a splendid broth of many uses. Here is Karen Hess's recipe for a New England-style cod chowder, which can be made also with haddock or other fish: FISH CHOWDER 3 to 4 pounds of cod head. neck and bones 2-inch or 3-inch cube of pork 2 or 3 onions 6 or 7 potatoes, sliced or cubed Salt and pepper 1 Quart milk 2 Tablespoons butter 1. Remove gills If the head is meaty, set aside with any fish chunks you may have. 2. Cover fish bones with 3 cups or so of water and cook for 30 minutes. 3 Meanwhile, cut salt pork into small cubes and sizzle lightly in soup pot. When it starts to get crisp, add onions and fry lightly. 4. Strain the fish broth into the pot and add the fish head, making sure it is well covered When it simmers, add potatoes and any fish chunks and continue simmer- ing until all are tender. 5 Toward the end, scald milk and add to chowder. Taste for salt and pepper the salt pork will itself lend a good deal Finally, set butter on top to melt New England tradition in- sists on removal of the salt pork, onion and the head, and adds crumbled crackers. We never did. Serves four to six. There must be thousands of other solutions to the handling of fish heads and other trim- mings One from Burma is found in "La Cuisine des Pauvres." by Huguette Couf- fignal Mrs Hess translates and explains the recipe as follows: BURMESE FISH HEAD SOUP 2 Pounds (approx fish heads (gills removed) 1 or 2 onions, sliced 1 or more cloves of gar- lic, chopped 1 Tablespoon butter or oil 2 or 3 carrots, sliced Small cabbage, in chunks 2 Tablespoons fresh cor- iander, chopped Salt and pepper, to taste 1 Simmer fish heads and onions in six cups of water, 35 to 40 minutes. 2 Heat garlic in fat until it starts to turn yellow. 3. Add broth, pressing through strainer to obtain all the juices, then add the other vegetables and salt to taste. 4 Simmer until tender Finally add coriander, check for salt and pepper, and serve.
