LAMB I'm very worried' about which milk to since I read an article on milk two months ago. 1 have two small children and I don't want to give them something not good for them. My husband and I'also drink milk. I have been getting the low fat milk. Is this all I have also heard a little milk is all right but you shouldn't drink a lot. I'm 24 and my husband is 30 and we would be very thankful if you could put our minds at ease. DEAR READER Milk is a very good food. I usually recommend that all adults get around a quart a day. to avoid the problem of getting too much in the I recommend that people use the fortified skim milk. The dairy industry has real- ly made some very good for- tified skim milk products. Not only are they nearly but they contain more calcium and more protein than whole milk That is because they have added nonfat milk solids to the skim milk. It is not too early to start your youngsters on forified skim milk. Developing good nutrition habits early in life usually helps in maintaining good eating habits the rest of one's life. The low fat milk is usually two per cent fat. It is definite- ly lower in fat than the whole but it still contains quite a bit of fat. That is why I prefer the foritifed skim milk. The occasional use of whole milk is not likely to make all that much difference. If yqu live in a place where you'can't get fortified skim MM the low fat and if that isn't possible you might try diluting your whole milk with reconstituted nonfat dry milk powder. A half and haft mix- ture is often satisfactory. It's also cheaper than whole milk. For some reason the flavor is improved if it is allowed to stand a day in the refrigerator. You can also use nonfat milk powder in cooking. This way you can make sauces con- taining or baked products and decrease the saturated fat content. You can even use more nonfat milk powder than the standard recipe calls to increase both your protein and calcium intake. There are some people who cannot tolerate milk. They have trouble digesting or ab- sorbing the milk sugar and develop indigestion. These people usually should avoid all milk products. Some of them with less serious degrees of in- tolerance can use some cot- tage buttermilk and yogurt. there are a few medical such as ul- cerative where the in- dividual gets along better avoiding milk and anything made with milk. for the most milk is an impor- tant food with high quality protein. Way back in early satellites went aloft to explore the fringes of space. There they found regions of radiation that seemed to doom all hopes for space travel. Then we learned that the radiation belts actually protect the earth from radiation. These lopsided doughnuts of radiation have enfolded the globe since earth's beginnings. But we were slow to recognize them. The inner belt con- tains mostly electrons and protons and their concentra- tion is most intense about 000 miles above the ex- cept in the polar regions. The outer belt contains mostly electrons and their densest concentration seems to be between to miles above the except in the polar regions. Since these electrically charged particles are trapped by its looping lines of magnetic force cause the belts to dip down to the magnetic poles. No doubt many and perhaps most of the high energy par- ticles are tossed out into space by solar flares and other dramatic events on the sun. Others may be caused by cosmic radiation from who knows where.
