Carrots are a valuable source of a substance which is con- verted to vitamin A in the body, and they are normally listed as a rich food source of vitamin A. Individuals who have a deficiency in vitamin A are benefited by eating car- rote. The effects are not quite as rapid as eating two carrots just before you go out, but certain- ly if you did this regularly your vitamin A intake would be adequate for night vision.
