Lethbridge Herald, The (Newspaper) - February 12, 1975, Lethbridge, Alberta BUDGET STRETCHERS Featuring LOW COST MEALS Wednesday, February 12, 1975 THE LETHBRIOQE HERALD 17 PORTUGAL BOATMAN'S STEW 2 pounds firm-fleshed whitefish (cod, haddock or halibut) cut in large chunks Salt 2 Onions, sliced 'A cup West Oil 1 can (6 ounces) Hunt's Tomato Paste 3 cups Water teaspoon red pepper 1 cup finely chopped parsley Vs cup dry white wine Slices of Italian bread (toasted if desired) Sprinkle fish with tt teaspoon salt; let stand 1 hour. Meanwhile lightly browrv onion in oil; pour off fat Stir in Hunt's Tomato Paste, water, red pepper, 1Vz teaspoons salt, pepper, parsley and wine Simmer 30 minutes. Add fish, simmer about 10 minutes more or just until fish flakes easily with a fork. To serve, place a slice of bread in each soup bowl ladle soup over. Makes 6 servings. MENU: Boatman's Stew, Rice with Peas, Fresh Fruit Salad, Italian Bread, Vanilla Ice Cream top- ped with Candied Chestnuts. Coffee. Ibs. Juicy Burger Vz cup fine Cracker crumbs V: cup chopped Onion 'A cup chopped fresh Parsley 1 Egg, slightly beaten Vt Teaspoon Pepper Seasoned Salt 2 oz.) cans Hunt's Tomato Sauce with Mushrooms POT ROAST MEAT LOAF 1 Tablespoon Salad Oil 6 to 8 small Carrots, pared and cut in 2 to 3 inch lengths. 6 to 8 small New Potatoes, pared Ib. fresh Green Beans, ends and strings removed. Combine Juicy Burger, cracker crumbs, onion, parsley, egg, pepper, 1 teaspoon seasoned salt and can Hunt's Sauce. Mix well, shape into loaf about 6 inches long. Heat salad oil in large heavy skillet or Dutch oven. Place meat loaf in skillet and cover tightly; cook over low heat 20 minutes. Spoon off fat. Arrange vegetables around meat; sprinkle with seasoned salt and pour on remaining 1V4 cans Hunt's Sauce. Cover; simmer 45 minutes or until vegetables are done. Arrange meat and vegetables on heated platter. If necessary, skim fat from sauce, if desired. Makes 5 to 6 servings. One package (10 oz.) frozen Green Beans may be substituted for fresh, if frozen beans are used, add to meat last 15 minutes of cooking time.
