KALDY Pood Scientist A world shortage of which until now has been a problem only in developing is likely to face North Americans soon unless sub- stitute sources are found. Most Canadians are ac- customed to a diet that contains adequate protein and until recent times took it for granted. Now that food costs are we are more interested in alternate sources of pro- tein because it is one of the more costly parts of our present diet. At the Lethbridge Research we are studying protein in various one of which is beans. Common dry beans have an average protein content of 22 per which is about the same as uncook- ed lean beef. Based on total protein content beans are a comparatively good source of protein. But what about the com- parative quality of the proteins of beef and Does the term apply to both of them on the same Quality of protein in the nutritional sense is the measure of the efficiency with which protein can be utilized for growth and maintenance of health. It is determined by the relative proportions of the various amino acids in the protein and the efficiency with which they are utilized. Egg protein has a well balanced amino acid com- position and has been assigned a value of 100 The cor- responding values for beef and beans are 80 and respectively. one has to eat almost twice as much beans as beef to obtain the same value in protein. Bas- ed on a requirement of 1.6 ounces of protein per day. an adult man would have to eat 9.3 ounces of lean beef or about 15.3 ounces of dry beans per assuming that one of these were his sole source of protein. The 15.3 ounces of dry beans is equivalent to about four 15- ounce cans of cooked beans. A person would have lit- tle difficulty consuming 9.3 ounces of beef in a day but the consumption of four cans of beans is difficult. other pro- tein sources are required when beans are used as a major protein source. For three all- meat weiners could be sub- stituted for the protein in one 15-ounce can of beans. Here we are speaking of protein requirement food is also required as a source of and minerals. Methionine is the most seriously lacking acid in beans. Methionine can be produced ar- but so far it has not been practical to use the synthetic product on a large scale. Research indicates that methionine causes objec- tionable flavors in foods to which it is and it has not improved the nutritional quality as much as theory had predicted.
