(AP) "Just once in 70 yean I try to get something from the ImmJfratlon service and I grumbles Lavern Cookson, 77, who to seeking permission to bring hit 15- year-old bride here from Honduras. Cookson, a retired insurance salesman, became acquainted with Esmeralda Zamora as a pen pal. The two exchanged letters for a year. He proposed, she accepted. He flew to Honduras and they were married last July 4, all through interpreters, since Cookson speaks only and English and his wife speaks only Spanish. Cookson returned home, Intending to arrange for Esmeralda to join him. He says be bought her a plane ticket but has been getting a run-around from the U.S.Immigration and Naturalization Service in efforts to secure permission for her to immigrate to the U.S.' "They tell me they have to have the approval of the Honduran' office in Los Angefes> says Cookson. "But the office in Los Angeles moved and they're waiting for an answer. If they didn't have that excuse they'd cook up another." He said the office of Sen. Bob Packwood, told him the same thing. "I can't think of anything in the worUH'm more digusted with than that lousy immigration he said. "I can't think of the words to say whay I think of it." (AP) Mory's, an eating club for Yale University men only, has agreed to open its mem- bership to Yale women be- cause of growing financial pressure, the club's president said Friday. The 113-year-old club, im- mortalized in the Whiffenpoof Song, has been unable to sell liquor since March 8, when its liquor licence was revoked. "The loss of this licence has seriously affected our busi- and was confronted with the alterna- tive of admitting women or closing the said Mory's president, Stanley Trotman of New Haven. CROSS STUDIO EDMONTON (CP) Ever since the European culture brought its medicine to North America, doctors have had difficulty communicating with native patients. The predominant language of north and north-central Indians from Quebec to northeastern British Columbia is Cree and non- native doctors and nurses often are unable to explain the nature of ailments to their patients. Anne Anderson, a 68-year- old Metis and former nurse, has written a dictionary which includes the translation of medical terms to Cree. "It's something that should have been done years said Mrs. Anderson. Medical terms in the dic- tionary range from x- as "have you ever been seen the womb, explained as "where life "Have you ever been is the Cree definition of vaccination. To help her write the dic- tionary, Mrs. Anderson re- cruited Indian shamen and ders who knew exactly how to describe certain terms, espe- cially male and female organs and various sicknesses. The dictionary uses only 15 letters of the which make up the basic sounds. There are four from a specific region of Canada. Mrs. Anderson said the first Cree dictionary was written by missionaries in the 1600s and others have been published since then. But the spellings and trans- lations varied with the writer and the language was never accurately written or translated, she said. Mrs. Anderson is an avid believer in restoring Cree to its original form from the post- colonization version. She said that in writing the dictionary she has fulfilled her Cree mother's dream: To en- sure the continuation of the Cree language. Mrs. Anderson manages a language school where she has taught about 450 students, mostly non-native, to become "quite capable of carrying conversation in Cree." N.Y.- One of the secrets of good cooking is simpler foods. Using ingredients that are in season, when they are freshest, most flavorful, and least expensive will guarantee best results according to a young but experienced cooking-school teacher and cookbook author. For a cook -such as Perlav, Meyers, a freezer is as useless as ketchup. "Can there be a truly great minestrone without fresh vegetables a good paella with frozen she asks. The answer is no, and she believes so strongly in freshness that she's written a cookbook on the premise. Called "The Seasonal Kitchen" (Holt. Rinehart, Winston. the book is divided into seasons with recipes and advice about growing and eating according to nature. "Fresh ingredients, the herbs, vegetables, and fruits in season, are the essentials for fine she said, at a luncheon interview. "Really creative cooks must be on intimate terms with their gardens, the local markets, the produce of both, and how they all work together. "The words 'simple ingredients' don't mean simple to prepare don't mean or convenience foods." she said. "Simplicity in food preparation should be largely based on season and locality. "In the summer, if you are near the ocean, a simple meal could mean a Risotto a la Provencale with shellfish and peppers, or a grilled bass with a highly flavored anchovy, basil, and tomato sauce. "In winter you may to do with a broccoli puree and a well-flavored ragout of beef. The first step toward this kind of basic and direct approach is familiarity with what the local markets have to offer and an understanding of nature's products. "They don't have to look like a still-life she said. "Fruit must be fresh not just bought for display." Mrs. Meyers teaches cooking in her New York school. The International Kitchen. She was born in Vienna and has lived in France, Spain, and Germany. She studied at the Ecole Hoteliere in Lausanne, the Cordon Bleu in Franca, and Vienna's Hotel Sacher. Each year she spends three months in Europe, visiting and working in little restaurants and famous places such as Grand Vefour in Paris, Demels in Vienna, and most recently with Paul Bocuse' in Lyon. "During the slow months, when the restaurants aren't so pressed for business, they .have time to let me work with them in the she said. Her experiences range from three-star Michelin restaurants to Fouchon, the famous, catering house in Paris. Her fluency in 'six languages is definitely an advantage in these working experiences. Here is one of her vegetable recipes. _J> SPAGHETTINI With EGGPLANT Serves 4 to 6 Preparation time: 35 minutes Cooking time: 25 minutes 2 small eggplants, peeled and finely diced ;f 6 medium tomatoes, peeled and finely diced Vz to cup good, olive oil Freshly ground white pepper 1 pound- thin spaghettini (Rozoni No. 9) 1 cup finely diced .prosciutto 1 red onion, finely sliced 2 garlic cloves, finely minced 1 tablespoon oregano 2 tablespoons fresh finely minced, or 1 teaspoon dry marjoram Garnish: Freshly ground black pepper, grated Parmesan cheese. Sprinkle eggplants with salt in a colander and let- them drain for 2 hours. PutHhe tomatoes in a large sieve, sprinkle with salt and let them drain for 2 hours. Dry eggplant cubes on paper towels: in'a large skillet heat 4 tablespoons olive oil. When it is very hot, brown the eggplant cubes on all sides. You may need to add more oil. Then season Uiem with salt and pepper and- put aside, about 8 to 10 minutes. Bring 4 quarts water fo a fast boil in a large casserole. Add spaghettini'and cook over high heat until it is just tender, about 8 to 10 minutes. While the spaghettini is cooking, saute the proscuitto in 1 tablespoon oil for 1 or 2 minutes. Remove from pan and put aside. Remove all but 2 tablespoons of oil from the skillet. Add onion and garlic and cook until onion is soft but not browned. Add well-drained tomatoes, oregano. marjoram, and prosciutto. Cook for 3 to 5 minutes. Season with salt and pepper. Drain spaghettini when done and return to the casserole. Pour tomato and_ eggplant sauce over the spaghettini and toss lightly. Sprinkle with black pepper and grated cheese. Serve with additional grated cheese on the side. This dish may be varied by adding Vz cup of freshly pureed basil to the tomato mixture with 2 additional cloves of minced garlic. To guide the cook who aspires to this kind of excellence. Cancer studies planned ST. AUGUSTINE, Fla. (AP) United States and. Soviet scientists have agreed to co-operate in studies into the causes and best treatment of cancers. But the pathway won't be easy, says a U.S. government official.
