It then becomes he responsibility to see that the eggs a valuable source of protein Are not wasted. _ _ the recipes which follow Are geared to Aid mom with her egg problem which is still probably a rather desperate situation. Each recipe Calls for you be probably guessed hard boiled eggs. Egg salad a la russe 1 envelope Una voted Gelatin 1 cup cold water divided 1 Chicken Bouillon cube cup creamy russian dressing 1 tsp. Lemon juice tips. Worcestershire sauce 4 hard cooked eggs chopped cup chopped celery 2 tbsp. Chopped Green Pepper Sprinkle Gelatin Over one half cup of the cold water Ina sauce pan. Add Bouillon cube. Place Over Low heat and stir constantly until Gelatin and Bouillon cube Are dissolved 3 or 4 minutes. Rem Ove from heat stir in remaining cup water and creamy russian dressing. Chill until mixture Mounds slightly when dropped Forra spoon fold in remaining ingredients. Brush a three cup Mold or individual holds with additional dressing turn in Gelatin mixture. Chill until firm. Untold and Garnish with salad greens if desired. Makes 4 to 6 Servings. Roquefort meat loaf onion chopped clip chopped celery 1 Clove Garl i a chopped 14 cup butter or Margarine 2 cups soft bread crumbs 2 eggs i cup 4 of crumbled Roque fort cheese 2ibs. Ground Chuck 1 tsp. Salt 14 tsp. Pepper tsp. Crumbled poultry seasoning 4 saute onion celery and garlic in butter until Golden. Remove from heat. Add bread crumbs and two eggs. Stir this mixture and the roquefort cheese into ground Chuck. Add Salt Pepper and poultry seasoning. Put half of the meat mixture into a Well greased 9x5x4 Inch loaf pan. Arrange hard cooked eggs in a Row on top of meat. Now add the rest of the meat mixture. Press Down firmly. Bake in a pre heated slow oven 325 degrees for one hour. Pour off drippings. Loo sen edges with a Sharp knife and untold. Cut into slices. Serve i the Tomato or mushroom sauce. Makes eight Servings. Easter encore salad 1 it. Torn tender spinach leaves 2 cups torn salad greens 2 cups diced cooked Ham cups diagonally sliced celery 4 hard cooked eggs quartered 1 cup Una voted Croutons cup coach House dressing place spinach and salad greens in bowl. Place Ham in the Center of the greens and surround with celery. Arrange eggs around Edge of bowl. Sprinkle with Croutons. To serve add dressing and toss lightly. Makes six Servings.
