unstoppable cook has come up with a new way to satisfy them the Gram Fora Mrs Douvanis will prepare a homemade meal to order package it steaming hot and have it ready for pickup at her home The idea was born recently during a telephone conversation with her sister Helena Yacoub now living in Oregon Helena used to work in Allentown City Hall with Jacqueline Poe and she wanted to do something ferent for her birthday Mrs Douvanis said She wanted to treat her to a Middle Eastern meal The Bethlehem cook volunteered to act as the substitute good fairy and to prepare a special menu for Mrs Poe I called up Jackie wish ed her a happy birthday and told her that courtesy be treated to a Gram The pair agreed upon a date and the menu And so Mrs Douvanis packaged a feast of baba eggplant with sesame hors charcoaled kibbe patty stuffed grape leaves Syrian bread toss ed salad with homemade cheeses baklava mool pastry fill ing for the birthday celebration And it was even prepared so that Mrs Poe could reheat the leftovers It was like heaven said Mrs Poe It was so good She really is the best cook Although Mrs Douvanis excels in Middle Eastern food she also offers menus with Greek and Hospital NUTRITION AND Last week this column reviewed the American Cancer Societys recent dietary recommendations in areas where there was sufficient data to warrant such guidelines The ACS plans to modify these recommendations as new information is obtained from research Today well look at the ACS comments on substances which have received much attention in the media but about which there is still insufficient evidence to base a specific recommendation Food additives Although various chemicals added to food have been found to cause cancer in animals and been banned several others are thought to be protective against car The cancer risks or benefits of food additives are still under tion Vitamin E More research is needed before the role of Vitamin E an antioxidant in human cancer prevention can be determined Selenium Although limited evidence exists that selenium a trace ele ment may protect against some cancers the ACS warns against the medically unsupervised use of selenium because of the potential for selenium poisoning Artificial sweeteners High levels of saccharin have been shown to cause bladder cancer in rats but there is not clear evidence for an increased risk of bladder cancer among moderate human users Also the longterm effects of new sweeteners now entering the market have not yet been studied in humans Coffee Although some studies link high tion of coffee with bladder and pancreas cancer others fail to make this con There is nothing to indicate that caffeine naturally found in both cof fee and tea is a risk factor in human cancer Meat and fish cooked at high temperatures such as by frying or broiling This practice of cooking gives rise to a number of potent mutagens agents that cause genetic changes in bacteria and some of them have caused cancer in animal tests More such testing is now under way Cholesterol Although cholesterol rs thought to be a risk factor in heart and blood vessel disorders there is little to link a high cholesterol blood level to risk of cancer Also evidence relating low blood cholesterol to cancer is in conclusive Based on the ACSs recommendation and com ments no optimal diet has yet been defined The Society is presently con ducting inhouse studies and supporting dozens of grants in nutrition research Such studies should bring further dietary recommendations in the near future If you have any questions about
